Polenta mit Feigen an Rotweinreduktion - schnellstes Feierabendessen {Polenta with Figs and Red Wine Reduction}

Especially now when the days are getting shorter and you go to work in the morning when it’s still dark and leave the office when it’s already dark again, I mostly love to spend my evenings in my cozy home. I want something quick and easy for dinner and love to chill with a good glass of red wine on the couch. Best is, to combine all of these things. The polenta with figs is refined with a red wine reduction. It takes only a few minutes to prepare it and since you had to open the bottle of red wine already for the sauce anyway, you can have a glass or two of the wine and make the stressful working day disappear.

My conclusion to this after work dinner is quite clear:
because it’s so quick and easy
for the extraordinary taste
that the wine is already open and you can drink some of it while preparing the meal.

Zutaten für 4 Personen
Zubereitungszeit: ca. 15 bis 25 Minuten
6 getrocknete Feigen (gewürfelt)
100 Gramm Cashewkerne (geröstet und gesalzen, gehackt)
½ Liter MIlch
½ Liter Gemüsebrühe
1 TL rosa Pfefferbeeren
200 Gramm Polenta (Maisgrieß)
2 Schalotten
2 Zweige Thymian
1 TL Honig
350 Milliliter Rotwein (trocken)
1 ½ TL Butter
Prise Salz und Pfeffer
8 frische Feigen

Ingredients for 4 people
Preparation time: about 15 to 25 minutes
6 dried figs (diced)
100 grams of cashew nuts (roasted and salted, chopped)
½ liter of milk
½ liter of vegetable stock
1 teaspoon pink peppercorns
200 grams of polenta
2 shallots
2 sprigs of thyme
1 tsp honey
350 milliliters of red wine (dry)
1 ½ tsp butter
Pinch of salt and pepper
8 fresh figs
How it's done
Bring milk and vegetable broth to the boil, slightly smash the pink pepper berries and sprinkle them together with the polenta into the boiling liquid. Stir in the chopped cashews and the diced dry figs. Bring the polenta briefly to the boil. Now turn of the heat and allow the polenta to swell for about 5 more minutes.

Meanwhile, peel the shallots, chop and boil them with the sprig of thyme, honey and red wine over high heat until you have only half of the mixture left. Stir in the butter and season with salt and pepper.

Cut the fresh figs in eighths (do not cut all the way through). Distribute the polenta on the plates, place the figs in the middle of the polenta and drizzle some red weine mixture over the figs. Sprinkle with the remaining thyme.
