Amarantriegel - mein perfekter Wandersnack {Amaranth Bars - the Perfect Hiking Snack}

Wer in München wohnt, hat neben der schönsten Stadt Deutschlands (sorry liebe Hamburger und Berliner) auch noch wunderbare Berge und Seen direkt vor der Haustür. Da ist es ein leichtes mal eben für einen Tag in die Alpen zum Skifahren zu gehen oder im Sommer eine Wanderung in den Bergen zu machen. Um die letzten Sommertage richtig auszukosten, haben wir am vorigen Wochenende eine Wanderung im wunderschönen Voralpenland am Tegernsee gemacht. So anstrengend wie es war, so schön war es auch und wie immer entschädigt einen der Ausblick für alle.


When you live in Munich, you not only live in the most beautiful city in Germany (sorry Hamburg and Berlin) but you also have wonderful mountains and lakes just outside your front door. It takes mostly only one hour by car to get into the Alps for skiing in winter or hiking in summer. To savor the last days of summer, we went hiking in the beautiful foothills of the Alps at the Tegernsee last weekend. It was an exhausting trip but the view over the Alps is worth the effort.

Zum Wandern gehört natürlich auch eine richtige Brotzeit. Wir hatten neben belegten Broten, Karotten und Äpfeln auch noch selbst gemachte Müsliriegel dabei. Die sind nicht zu süß und enthalten neben Nüssen und Rosinen gepufftes Amarant. Letzteres ist mit seinem hohen Eiweiß- und Mineralstoffgehalt der perfekte Begleiter für eine anstrengende Wanderung. Mhh... und lecker waren die kleinen Wunderriegel natürlich auch noch!

A hiking trip always includes a good snack. We had next to some sandwiches, carrots and apples also some homemade granola bars with us. They were not too sweet and feeds you well with some healthy ingredients like nuts, raisins and puffed amaranth. Especially amaranth is high in protein and minerals and therefore the perfect companion for a long hiking trip. Mhh… of course the small miracles bars were delicious, too!
 
Zutaten für eine Springform (24 cm Ø)
75g Rosinen
50g Mandeln, gehackt
50g Haselnüsse, gehackt
20g Sonnenblumenkerne
70g Haferflocken
40g Puffamarant (Amarant kann man auch selbst puffen)
1 TL Erdnussbutter
50g Zucker
4 EL Agavendicksaft
75g Butter (für Veganer Margarine)
1 Prise Salz

So wird’s gemacht

Rosinen, Mandeln, Haselnüsse, Sonnenblumenkerne, Haferflocken und Puffamarant in eine Schüssel geben und eine Prise Salz zugeben. Alles gut mischen. Wer wissen will, wie man Amarant selbst pufft, der kann sich einfach das Video am Ende des Posts anschauen. Es ist so einfach.

Nun die Butter in einem Topf bei kleiner Hitze schmelzen. Zucker und Agavendicksaft untermischen und bei mittlerer Hitze unter ständigem Rühren zum Kochen bringen. Ganz zum Schluss noch die Erdnussbutter unterrühren und die Zuckermischung zu den übrigen Zutaten geben und alles gründlich mit einem Holzlöffel mischen.

Eine Springform (24 cm Ø) mit Backpapier auslegen und die Mischung hineingeben. Gut andrücken und im vorgeheizten Backofen bei 180 °C (Umluft: nicht empfehlenswert) etwa 25 Minuten backen. Vollständig abkühlen lassen, aus der Form lösen und zu Riegeln schneiden.

Und so einfach pufft man Amarant selbst:




Ingredients for one round baking tray of 24 cm Ø
75g raisins
50g almonds, chopped
50g hazelnuts, chopped
20g sunflower seeds
70g rolled oats
40g Puffamaranth (you can puff amaranth yourself)
1 teaspoon peanut butter
50g sugar
4 tablespoons agave syrup
75g butter
1 pinch of salt

How it's done

Put the raisins, almonds, hazelnuts, sunflower seeds, oatmeal and puffed amaranth in a bowl and add a pinch of salt. Mix all well. Who wants to know how to puff amaranth at home, can watch the video at the end of this post. It's that simple.

Now melt the butter in a saucepan over low heat. Add sugar and agave syrup and bring to a boil on medium heat, stirring constantly. Stir in the peanut butter, add the sugar mixture to the other ingredients and mix everything thoroughly with a wooden spoon.

Line a round baking tray (24 cm diameter) with baking paper and pour in the mixture. Press all with the wooden spoon and bake in the preheated oven at 180 °C (fan: not recommended) for about 25 minutes. Allow to cool completely and cut into bars.

homemade müsliriegel sind wirklich lecker! hab ich auch vor kurzem erst gemacht. und ich hab auch gepufften amaranth verwendet...köstlich!
